Ratatouille is one of Provence’s most iconic dishes – a celebration of summer vegetables slow-cooked with herbs and olive oil. This classic French recipe makes the perfect healthy vegetarian dinner.
Ingredients
- 2 large zucchini, sliced
- 2 yellow squash, sliced
- 3 large tomatoes, sliced
- 1 large eggplant, sliced
- 2 red bell peppers
- 1 onion, finely diced
- 4 cloves garlic
- Fresh thyme and basil
- 4 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Prepare the tomato sauce base.
- Layer vegetables in overlapping circles over the sauce.
- Season with olive oil, thyme, salt and pepper.
- Cover and bake for 45 minutes, then uncover for 20 more minutes.
