Ingredients

  • 2 large zucchini, sliced
  • 2 yellow squash, sliced
  • 3 large tomatoes, sliced
  • 1 large eggplant, sliced
  • 2 red bell peppers
  • 1 onion, finely diced
  • 4 cloves garlic
  • Fresh thyme and basil
  • 4 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Prepare the tomato sauce base.
  2. Layer vegetables in overlapping circles over the sauce.
  3. Season with olive oil, thyme, salt and pepper.
  4. Cover and bake for 45 minutes, then uncover for 20 more minutes.
