The molten chocolate cake (fondant au chocolat) is pure indulgence. The trick is finding the perfect baking time – just enough to set the outside while keeping the center gloriously liquid.

Ingredients (4 ramekins)

  • 200g dark chocolate (70%)
  • 150g butter
  • 4 eggs + 4 egg yolks
  • 150g icing sugar
  • 50g flour
  • Vanilla extract

Instructions

  1. Melt chocolate and butter together.
  2. Whisk eggs, yolks, and sugar until pale.
  3. Fold in chocolate mixture and flour.
  4. Bake at 425°F for exactly 12 minutes.
  5. Invert immediately and serve with vanilla ice cream.
